PUMPKIN FRITTI
Autumn’s crunchiest treat.
Pumpkin fritti (6 portions)
100g Rice flour
100g Plain flour
5g Honey
400ml Sparkling water
1 Baking powder (tsp)

Delica pumpkin (cut into strips)
Seasoned flour
Frying oil

Hot honey (to finish)
Fresh cracked black pepper
Lemon wedge.
Mix the flours, whisk in cold sparking water until you have batter consistency, add a drizzle of honey.
Dust pumpkin slices in flour and then place in batter, fry at 180c until golden and crispy.
Chive crème fraiche (6 portions)
60g Cream cheese
120g Crème fraiche
5g Chive (chopped)
½ Garlic clove (grated)
½ Lemon (zest + juice)
Salt + pepper
Start by finely chopping your chives, mix with everything and check seasoning.
