OMELETTE, SOFT LEEKS & PEAS

This dish is the perfect lazy Sunday brunch!

Soft leeks (2 portions)

2 Leeks
½ Lemon (peel)
2 Garlic cloves
30g Butter
30ml Olive oil
Salt + pepper

  1. Dice the leeks, peel and chop the lemon and peel and chop the garlic. In a medium pan add the butter and oil and cook the above slowly without any colour for around 10 minutes. Check seasoning

Omelette

3 Eggs (Leghorn whites, @Clarence court)
Salt + pepper
Butter

  1. Whisk the eggs with a fork, cooking foaming butter to make and omelette

Garnish

100g Fresh peas
Picked herbs
Lemon juice
Olive oil

  1. Boil the peas, dress with the picked herbs, lemon and olive oil. Serve along side the cooked omelette and soft leeks.
