MUSSELS CASINO

Like clams casino, just better.

Ingredients:

(2/4 portions)

24 Mussels
55g Butter (soft)
4 Streaky bacon (diced, crispy)
2tbsp Mayo
2tbsp Parsley (chopped)
1 Garlic clove (grated)
Splash of tabasco
Splash of pastis
Salt + pepper

30g Parmesan

  1. Add the mussels to a hot pan, add a little white wine and steam until they pop open. Strain and place in the fridge to chill.

  2. Fry bacon in a pan until crispy.

  3. Pick and chop the mussel meat and mix with all other ingredients. Put mix into mussel shells and cover with parmesan. Put under a hot grill for 2-3 minutes to gratinate.
