Madeleines

You can't beat a freshly baked plate of madeleines... cook them as you want them!

Madeleines (20 pieces)

4 Whole eggs (@Clarencecourt)
200g Sugar
-
50ml Whole milk
125g Melted butter
-
250g Plain flour
9g Baking powder
1 Vanilla
½ Orange (zest)
½ Lime (zest)
½ Lemon (zest)

  1. Whisk the eggs and sugar on high until light and fluffy. Mix the milk and melted butter and add to the egg mix by pouring in gradually.

  2. Next sieve the flour and mix with the rest of the dry ingredients, fold the dry ingredients into the wet mix and cool in the fridge in piping bags.

  3. Cook in madeleine moulds at 170 degrees c for around 4-6 minutes.
